The Sustainable BLT


For Will's birthday I made BLTs and yam fries, and managed to get all the ingredients at either local farmers markets (or rising sun in this case) and a great little butcher shop that just opened in my neighborhood, Bill the Butcher. The bacon was amazing, and of course locally sourced, with a great focus on sustainability, and not wasting any parts of the animal. I love that if there is one thing popping up more and more in Seattle its places to buy local/organic/sustainable, and contrary to popular belief, it doesn't have to cost a lot. Sure, if you did all that shopping at PCC you would drown in organic debt, but going to places like famers markets are surprisingly cheap.

Not to say I don't appreciate being able to get any vegetable year round, but I think there is something to be said about living off of what is locally available, even if that means not getting squash in June. So I say, if you have the choice, which you pretty much always do, skip safeway and head to the farmers market, and you not only support the little guy, but you might learn something too.
